Buckwheat banana bread

Buckwheat flour is a naturally gluten-free option that is also high in protein, fibre, & magnesium. It can be a great option if you’re craving something sweet as its lower glycemic index will mean it has less of an impact on blood sugar levels = more stable energy & hormone balance!

  • 3 ripe bananas
  • 3 eggs
  • 1/4 cup extra virgin olive oil
  • 1/4 cup maple syrup
  • 1 tbsp vanilla extract
Dry ingredients:
  • 2 cups almond meal
  • 3/4 cup buckwheat flour
  • 1 tbsp bicarbonate of soda
  • 2 tbsp cinnamon
Preheat oven to 180°C fan. Mix all the wet ingredients in one bowl and the dry ingredients in another. Combine the wet and dry mixtures and add the chocolate chunks. Pour the batter into a tin and bake at 180°C for 30-40 mins (or until a knife comes out clean). I love to serve this with some Greek yogurt for extra protein!
