Banana pancakes

Banana oatmeal pancakes, aka your new favourite breakfast! 🍌🥞

Protein-packed, full of fibre, flavours, and wholesome ingredients that not only keep you feeling full and satisfied but also support your digestion, mood, and hormones!

  • 1 cup oats or oat bran (second option will give you extra fibre!)
  • Splash of milk
  • 1 egg
  • 1 tsp cinnamon
  • 1/2 tsp bicarbonate soda
  • 1 tsp apple cider vinegar (tip for extra fluffiness)
  • 1 banana
  • 1/4 cup Greek yogurt
For the chia blueberry jam:
  • 1 cup blueberries
  • 1 tablespoon chia seeds
  • 1 tablespoon water
  • 1 tablespoon honey or maple syrup (optional)
  1. Make chia blueberry jam by cooking blueberries with water until soft, then stir in chia seeds and maple syrup. Set aside to thicken.
  2. Blend oats/oat bran, almond milk, egg, cinnamon, bicarbonate soda, apple cider vinegar, mashed banana, and Greek yogurt until smooth. The addition of apple cider vinegar helps create light and fluffy pancakes by reacting with the bicarbonate soda while also contributing to the overall taste and texture of the final dish.
  3. Cook batter in a greased pan at medium heat, flipping once bubbles form (2-3 mins per side).
  4. Serve your pancakes warm with chia blueberry jam on top and enjoy your delicious and protein-packed breakfast!
