Clementine cake

This cake is a nourishing treat for gut and hormone health. Fibre from buckwheat and oats supports digestion, while vitamin C from clementine aids in hormone balance. Antioxidant-rich cocoa adds a comforting boost, making this a delicious choice!

  • 2 small clementines (blended)
  • 50g coconut sugar
  • 2 eggs
  • 50g olive oil
  • 85g buckwheat flour
  • 35g oat flour
  • 10g cocoa powder
  • 2g bicarbonate soda
  • Clementine zest (for garnish)
  1. Preheat Oven to 180°
  2. Mix in a large bowl: coconut sugar & eggs and then olive oil, and clementine juice.
  3. Add Dry Ingredients: buckwheat flour, oats, cocoa powder, and bicarbonate soda.
  4. Pour batter into a cake pan and bake for 35-40 mins or until a toothpick comes out clean.
  5. Allow the cake to cool, then zest clementine peel over the top.
