A simple and super satisfying recipe that is full of vitamins and minerals, as well as anti-inflammatory ingredients like ginger and pak choi. A great one when you want something nutritious but fun and comforting.
A pack of whole-grain ramen soba noodles
4 cups vegetable broth
2 tablespoons miso paste
1 cup shiitake mushrooms
2 sheets of nori (seaweed), torn into pieces
2 tablespoons soy sauce
1 tablespoon sesame oil
2 green onions, sliced
1 Pak choi
1 cup spinach leaves
Cook the noodles according to package instructions. Drain and set aside.
In a pot, heat vegetable broth over medium heat. Once warm, whisk in miso paste until dissolved.
Add shiitake mushrooms and nori to the broth. Simmer for 5-7 minutes until mushrooms are tender.
Stir in soy sauce and sesame oil.
Add the noodles to the broth and top with green onions, pak choi, and spinach leaves.
