Asparagus rice bowl with sardines

20 minutes

Sardines are an excellent source of omega-3 fatty acids, specifically EPA and DHA, which are crucial for hormonal health. Additionally, they are a convenient and super cheap option, making them a great addition to your dishes! Of course if you don’t like them, you can add your protein of choice, or other veggies (as you’re getting some protein from the lentils).

  • 1 cup basmati rice (cooked in advance for convenience and resistant starch)
  • 1 can of lentils
  • 1 onion
  • 2 cloves garlic
  • 1 bunch of asparagus
  • 1 can of sardines
  • 2 tablespoons tamari (or soy sauce)
In a pan, heat olive oil over medium heat. Add diced onion and minced garlic, and sauté for 2-3 mins. Add the asparagus and cook for another 5mins until relatively tender. Stir in the lentils and pour the tamari sauce with salt/pepper to taste. Serve the rice and lentil mixture in bowls, and top each with sardines or your preferred source of protein. Enjoy!
