Miso mushroom chickpeas

This is a quick, wholesome, and super satisfying! Perfect for a nourishing meal in minutes.

  • 1 can of chickpeas
  • Mushrooms, sliced
  • 1 tbspn Miso paste (dissolved in 1/4 cup hot water)
  • Thyme
  • 1/2 onion
  • 1 clove garlic
  • 1-2 eggs
Heat olive oil in a pan over medium heat. Sauté diced onions and minced garlic until golden, then add the sliced mushrooms and cook for 4/5 mins. Stir in drained chickpeas, dissolved miso paste, and thyme. Season with salt & pepper, more thyme… and ready!
