Pancakes

Made with buckwheat flour for lasting energy and cacao powder for a rich, antioxidant boost, they’re naturally sweet, high in protein, and packed with fibre to keep you feeling satiated and nourished!

  • 1 large or 2 small eggs
  • 1 large ripe banana
  • 1 cup buckwheat flour
  • 1/3 cup of unsweetened cocoa powder
  • 1 cup unsweetened milk
  • 1/3 cup Maple Syrup (optional)
  • Splash of apple cider vinegar
  • Pinch of sea salt
  • 1/4 tbsp Cinnamon
  • 1 tsp sodium bicarbonate
In a bowl, mash the banana and whisk in the eggs, milk, and optional maple syrup. Add buckwheat flour, cocoa powder, apple cider vinegar (this helps the pancakes rise and be fluffier!), salt, cinnamon, and sodium bicarbonate, then mix. Heat a pan over medium heat with some olive oil and pour batter, cooking until bubbles form on the surface, then flip and cook for 1-2 extra mins. I added some greek yoghurt for extra protein and berries for polyphenols! Enjoy!
