Spinach pancakes

My gluten-free version of spinach pancakes!

  • 1 large free-range egg
  • 1 cup of rice/buckwheat flour
  • 1 cup of (vegetable) milk of choice
  • 80g of baby spinach
  • Salt
  • Pepper
  1. Blend all ingredients until smooth
  2. Heat up a non stick frying pan with extra-virgin olive and pour some batter
  3. Leave cooking on each side for 2 mins approx
  4. Top up with favourite filling and enjoy!
  5. For the filling I used some sautéed asparagus, leek & onion with prawns.Another tasty option could be parma ham, avocado and a fried egg with chilli flakes!
