I first discovered this recipe through Jamie Oliver, and then my dear @getthosegreens became obsessed with how simple and convenient it is. It’s now a regular in my kitchen too.
2 large free-range egg (or 1 egg and 2 whites)
100g spinach (a handful)
2 tbsp of oat flour (or buckwheat)
Salt
Pepper
Blend all ingredients until smooth
Heat up a non stick frying pan with extra-virgin olive and pour some batter
Leave cooking on each side for 2 mins approx
Top up with favourite filling and enjoy!
For the filling I used some sautéed asparagus, leek & onion with prawns.Another tasty option could be parma ham, avocado and a fried egg with chilli flakes!
